Potluck Magic: Curry Apple Quinoa

This dish is awesome for potlucks because it is delicious, impressive, and requires almost no effort!

Put the following ingredients in your rice cooker:
1 cup quinoa (I always use red quinoa; I’m sure it would be fine with brown quinoa, but get the red stuff if you can find it!)
1 cup veggie broth
1 cup coconut milk
a lot of curry powder – maybe 2 big tablespoonsful?
at least a tablespoon of cinnamon
at least half a tablespoon of ginger
as much garlic as you think your friends can handle

Press the button.

Chop up an apple into tiny bits.
Stir it into the quinoa when it is done.
Add soy sauce or Bragg’s Liquid Amino’s as desired.

If you want to make this dish a little fancier, saute some tempeh while the quinoa is cooking. I usually saute it in vegetable oil or peanut oil, and add more garlic, curry powder, cinnamon, and ginger to it so the flavor matches the quinoa. This gets stirred in with the quinoa along with the apple.
