These cookies are great. I mean, they’re really freaking great. Basically, I just took everything that I like in a cookie, and put it in these cookies.
In case you are wondering why they are called Space Unicorn Cookies, it is because they are the awesomecookieness equivalent of the Space Unicorn song, which is the greatest song to ever exist in the history of all songs.
I use a 3-bowl approach for this recipe, but if 2 bowls work better for you, go for it.
Bowl 1 Ingredients
2 cups flour
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp ginger powder
½ tsp nutmeg
½ tsp allspice
tiny pinch of cloves
2 Tbsp cornstarch or arrowroot powder
¼ cup cocoa powder
Bowl 2 Ingredients
2/3 cup brown sugar (ideally dark, but light will do)
2/3 cup white sugar
1 1/2 tsp vanilla extract
6 Tbsp canola oil
4 Tbsp coconut oil
6 Tbsp unsweetened, full fat coconut milk
Bowl 3 Ingredients
1/2 cup shredded, unsweetened coconut
1/2 cup pecans (you really can use any nuts you like)
1/2 cup chocolate chips
Preheat the oven to 350 degrees.
Prep your baking trays now — this is a messy-hands recipe! Lay a sheet of parchment paper or aluminum foil on your trays.
Mix or sift the Bowl 1 Ingredients.
Combine the Bowl 2 Ingredients. You’ll get a thick paste, somewhere between the consistency of butterscotch and peanut butter.
Combine Bowl 1 and Bowl 2 to make your dough.
Put your Bowl 3 ingredients in your 3rd bowl. Use your hands to mix everything together really well, so all your cookies will have some of everything in them! Then add those ingredients to the dough.
Now you want to make little ping-pong sized balls out of your dough. The trick is to make sure you have a good balance of dough and STUFF in each ball, so that you get nice cookies that won’t fall apart.
Bake for about 12-15 minutes, then let cool before serving.
